I grew up with simple grilled cheese sandwiches. My grandmother and I would make them in her official “grilled cheese maker” that I thought was the neatest thing since sliced bread. Growing older I’ve learned to add the occasional twist to the classic for a more grown up version. 
My mother was sweet enough to pick me up some fresh pesto last weekend at the farmer’s market and it gave my lunch sandwich a wonderfully fresh spin.

ingredients: basil pesto, grape tomatoes, mozzarella

    Mmm that looks yummy with the pesto! Grilled cheese is such a classic. I swear all I have been making for dinner lately is sandwiches and salads…so refreshing when it is hot!
