I pretty much look for any occasion to make a cake. Birthday? Obviously. New Neighbor? Yep. Win the lottery? That’s two cakes for you.
This past weekend my mom and I made a fabulous red velvet cake since it was one of my good friend’s favorite. This is a multi-layer cake and to me that makes it just a bit more special. (We did happen to have some trouble transporting the cake and the top slid off the bottom a bit. We scooted that sucker right back on top and kept truckin’ along.)
The recipe is a great go-to anytime you need a red velvet recipe.

Red Velvet Cake
recipe from food network
ingredients:
2 1/2 c. all-purpose flour
1 1/2 c. sugar
1 tsp. baking soda
1 tsp. fine salt
1 tsp. cocoa powder
1 1/2 c. vegetable oil
1 c. buttermilk, room temperature
2 large eggs
2 tbsp. red food coloring (1 ounce)
1 tsp. white distilled vinegar
1 tsp. vanilla extract
directions:
Preheat oven to 350 degrees. Lightly oil and flour 3 round cake pans.
In a large bowl, sift together the flour, sugar, baking soda, salt and cocoa powder. In another large bowl whisk together the oil, buttermilk, eggs, food coloring, vinegar and vanilla.
Mix the dry ingredients into the wet ingredients until just combined and a smooth batter is formed.
Divide the cake batter evenly among the cake pans. Place the pans in the oven evenly paced apart. Rotate the pans halfway through the cooking. Bake about 30 minutes.
Top with frosting and serve!

    I’ll admit it — I’m not a big red velvet fan. It’s not the flavor so much as the epic amount of food coloring that freaks me out! But your cake is gorgeous.
