As soon as warm weather arrives I can’t seem to get enough lemon flavored treats. Fresh lemon slices in  cold water, lemon zest on asparagus and now these lemon poppy seed muffins. The zingy (is that a word?)  addition of lemon on most things seems to kick the taste up a few notches. It also just screams spring and time spent outdoors.
These muffins make the mornings start off the right, the afternoon snack satisfying or the dessert light and delicious. I opted to leave the glaze off and they were so so good! If you’re looking for a richer taste then glaze it up!
Lemon Poppy Seed Muffins

ingredients:
2 c. all-purpose flour
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
2 tbsp. poppy seeds
1/2 c. unsalted butter, at room temperature
1 c. sugar (I used about 1/2 cup)
2 eggs
zest of 1 lemon
2 tsp. fresh squeezed lemon juice
1 tsp. vanilla extract
1 c. plain greek yogurt
glaze:
1 c. powdered sugar
2 tbsp. fresh squeezed lemon juice
directions:
Preheat oven to 350 degrees.
In a medium bowl whisk together flour, poppy seeds, baking powder, baking soda and salt.
In a large bowl beat together the sugar and butter until light and fluffy; about 3 minutes.
Beat eggs in one at a time. Add the vanilla, lemon juice and lemon extract.
With the mixer on lower speed, alternate adding the flour and greek yogurt until combined.
Pour the batter into the muffin tins and bake for 17-20 minutes.
To make the glaze, whisk together the sugar and lemon juice and drizzle over muffins while they’re still warm.

    Lemon poppy seed is one of my favorite types of muffins. I used to work in a grocery store and I would eat one every day on my “breakfast break”!

    I love making a batch of muffins for the week and having them on hand for breakfasts. I’ve never had a poppy seed one though!

    Oh girl, these look amazing! I am a muffin addict, so I’m a little nervous to make these since they wouldn’t last too long, haha. I might have to try this weekend though anyways 🙂
