I’m always looking for new, clean eating snacks. From energy balls to granola I love throwing together an easy snack that will satisfy a craving and a hunger. These oatmeal bars couldn’t be easier- they only require five ingredients! When the after breakfast or mid afternoon hunger strikes, grab one of these and keep movin’!
No Bake PB2 and Banana Oat Energy Bars

ingredients:
1 ripe banana
1 truvia packet
1 cup quick oats
1 tsp. vanilla extract
4 tbsp. powdered pb2 (don’t add the water)
directions:
Add all of the ingredients to a mixing bowl and stir. Keep stirring as the mixture of the oats start absorbing the banana and forming a cookie dough type texture. Each bar will take about 1 heaping teaspoon. Mold into a mini granola bar shape and top with sprinkles for a bit of color.
These are great stored in the fridge or freezer.
Now, grab and go!
*pb2 is a great way to get a peanut butter taste, without the oil and less calories from fat. You mix it with water to get your standard peanut butter consistency. I typically use almond butter, but pb2 works great in some recipes and also as an addition to a smoothie. It’s often found in the organic/health section of the grocery store.
