We all know and love Starbucks, but what’s even better (for your wallet and probably waistline) is a homemade version of the coffee shop favorites. Since it seems I have some fellow scone lovers out there I decided to give this copycat cinnamon scone recipe a try. I love that it uses a mix of all-purpose and whole wheat flour along with some greek yogurt. These are de.lic.ious and will definitely be made again. They’re lighter than most scones and the pops of cinnamon that come from the batter and cinnamon chips are the perfect touch.

Cinnamon Scones

ingredients:
1.5 c. all-purpose flour
1/2 c. whole wheat flour
1/4 c. granulated sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. cream of tarter
1/2 tsp. salt
1 tsp. cinnamon
1/2 c. cold unsalted butter, cut into 1/2 cubes
1/2 c. plain greek yogurt
1 egg
1/2 c. cinnamon chips

glaze:
1/2 c. confectioners sugar
1/2 tsp cinnamon
1 1/2 tsp milk

directions:
Preheat the oven to 350F. Line a baking sheet with parchment paper or nonstick spray and set aside.

In a large mixing bowl whisk together the dry ingredients: flour, sugar, baking powder, baking soda, cream of tarter, salt and cinnamon. Cut in the butter using a pastry cutter or fork until the butter is the size of peas. (I take two knives and criss cross through the dry mixture to slice any large butter pieces).

In another bowl, whisk together the egg and yogurt. Add tot eh dry mixture and mix until just combined.

Turn the dough out into a floured cutting board. Knead a few times to bring the dough together and shape into a ball. Gently press down to make the dough into a disc, approx. 8’9″ in diameter. Use a sharp knife  (or pizza cutter) to cut into eight triangles.

Transfer the scones to the prepared baking sheet, making sure to space about 2″ apart. Bake for 15 minutes or until golden beown. Remove from the oven and transfer to a wire rack to cool. While the scones are cooling make the glaze by whisking all ingredients together until smooth. Drizzle over completely cooled scones just before serving and allow the glaze to dry slightly before serving.
