overnight oats strawberry

A few years ago I discovered overnight oats for breakfast and instantly became hooked (much like the rest of the blogging world). To mix things up I like to occasionally make it without greek yogurt (vegan friendly as well). It’s also convenient to make when you come back in town and don’t have anything in the fridge. This is one of my new favorite warm weather breakfasts that’s great to grab and go. Feel free to sub for any fruit that you like!

Coconut Strawberry Overnight Oats
via my whole food life

ingredients:
1/2 c. rolled oats
1/2 c. almond milk (add more or less depending on the consistency that you like)
1/2 tsp. vanilla extract
2 tbsp. unsweetened shredded coconut
2 tsp. chia seeds
2 tsp. maple syrup (I used honey instead)
2 large strawberries, diced

directions:
Combine all ingredients in a jar and mix well. Cover and place in the fridge overnight.

    I’ve made something just like this but without the coconut! You make me want to go buy some. I love chia seeds. So good!

    omgosh.. we grew up on ‘overnight oats’ in the summer!
    it’s called müsli in german and growing up in germany we loved this summer tradition!!

    Just had overnight oats this morning! They are definitely my go to favorite for the summer- cold, gooey and yummy!
