zucchini noodles

This week’s recipe was a tough decision since I have three amazing ones that I can’t wait to share. The ‘zoodles’ however were the frontrunner and I couldn’t wait to pass this along. The epitome of a healthy and clean dish this is one of my favorite new recipes and I can promise it’ll  be made over and over again. We picked up the veggetti over the weekend and it’s the neatest kitchen gadget, easily creating ’spaghetti’ strands with fresh zucchini. I also can’t wait to try carrots, potatoes and squash through it. Just call this your new favorite summer dish.

‘Zoodles’ with Lemon- Garlic Spicy Shrimp

ingredients:
1 1/2 tsp. olive oil
pinch crushed red pepper flakes
4 oz peeled & deveined shrimp
2 cloves garlic, sliced thin and devided
1 medium, zucchini, spiralized
pinch salt and fresh black pepper
1/4 lemon
1/4 c. halved grape tomatoes

Directions:
Heat a nonstick skillet over medium-high heat. Add 1 tsp of the oil and crush red pepper flakes. Add the shrimp and season with a pinch of salt and pepper. Cook for 2-3 minutes. Add half of the garlic and continue cooking 1 minute more, or until the shrimp is cooked through. Set aside on a plate.
Add the remaining 1/2 tsp oil and garlic to the pan, cook 30 seconds then add the zucchini noodles and cook 1 1/2 minutes. Add the shrimp and tomatoes to the pan and squeeze the lemon over the dish. Remove from heat and serve.

    I still haven’t tried making zucchini noodles yet but they look so good! I really need to get a spiraler to try this out!

    I’d love to try this!! We recently started eating spaghetti squash in the place of pasta so zuchinni is next up!!

    The Veggetti! That is hilarious and so awesome. BB&B is the best and they have everything. What a perfect dish and I think I need to try it. I love zucchini!

    I saw this recipe (or similar) on Pinterest and pinned it. My bf doesn’t eat bread/pasta, so this would be a great alternative for both of us!

    I love using zucchini to make pasta! Sometimes we use half gluten free pasta and half zucchini and it is just delicious. I can’t wait to try this recipe, I love shrimp!!

    I love zucchini and don’t have a spiralizer, so I’ll have to figure out plan B to get this together (maybe a veggie peeler? ideas?).
