Pomegranate Butternut Squash Quinoa

We’re going to start 2015 off on the right (healthy) foot, sound good? The butternut squash and fresh pomegranate seeds add a serious antioxidant punch. Fun little fact for you — butternut squash is actually considered a fruit since it has seeds. Who knew? It offers a dose of fiber and even helps prevent against heart disease thanks to its high nutrient count. I usually have quinoa as a main dish, or tossed in a salad since it can be pretty filling. Like all of my previous quinoa recipes, this makes for an excellent lunch the next day!

Roasted Butternut Squash & Pomegranate Quinoa
via cupcakes and kale chips

ingredients:
2 c. butternut squash, cut into 1/2 in cubes ( save yourself some time and grab the pre-cut ones from Trader Joes)
2 tbsp olive oil
1 c. uncooked quinoa
2 c. vegetable or chicken broth (I used vegetable)
1 pomegranate, seeds only
2 tbsp balsamic vinegar
2 tsp chopped fresh sage
crumbled goat cheese

directions:
Preheat oven to 400 F. Spray a baking sheet with cooking spray. Toss the cut squash with 1 tbsp olive oil and salt and spread on baking sheet. Roast for 20 minutes, tossing after 10 minutes. For the quinoa, prepare according to package directions, substituting the chicken/vegetable broth in place of the water. In a large bowl, combine the squash, quinoa and remaining ingredients. Top with crumbled goat cheese.

    I have a serious love affair with butternut squash, it’s in my post today too, so I must make this! Where do you buy pomegranate seeds from? I was going to make that cheese ball you brought to my house but I had no clue where to buy the seeds from!

    I definitely need to start making quinoa more often! And I love pomegranate so this sounds like the perfect receipt! Oh and goat cheese… yum!
