Cheesy Corn Dip

I seem to get my best recipe making done when I’m back in St. Louis. It just isn’t as fun cooking for one back in Atlanta. It also doesn’t hurt that Brian will eat anything. This cheesy corn dip couldn’t be easier and  involves only one mixing bowl and a baking dish. Less dishes to dirty and clean is always a win. I love the fresh toppings of green onions and tomatoes on this one. Since we’re fiends for anything spicy, next time I’m gong to add fresh diced jalapeños to the mix! Can we also take a minute to appreciate that it calls for more greek yogurt than mayo (least favorite condiment ever – gross)?

Cheesy Corn Dip

ingredients:
3 cups corn kernels, frozen or canned
1 (4.5 oz) can chopped green chiles, drained
1 1/2 c shredded mozzarella cheese, divided
1 c plain greek yogurt
1/4 c mayonnaise
2 tbsp chopped fresh cilantro leaves
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dried oregano
salt & pepper, to taste
1 Roma tomato, diced
2 green onions, thinly sliced

directions:

Preheat oven to 375 degrees F. Lightly coat a 9-inch baking dish with nonstick spray. In a large bowl, combine corn, chiles, 1 cup mozzarella cheese, Greek yogurt, mayonnaise, cilantro, garlic powder, onion powder and oregano; season with salt and pepper, to taste. Spread corn mixture into the prepared baking dish; sprinkle with remaining 1/2 cup mozzarella cheese. Place into oven and bake until bubbly around the edges, about 20-25 minutes. Serve immediately, garnished with tomato, green onion and cilantro.

    I am so with you girl! Down with the mayo! I always sub greek yogurt when at all possible! This looks so good!

    AH this looks delicious! Yes a recipe for just one is hard, and if I’m eating something “naughty” I don’t want to have any leftovers! I love mayonaise.. lol but I’m always subbing in greek yogurt for mayo when I can! Sometimes you can’t escape using just a little.

    Definitely going to have to give this a try!
