healthy chicken sausage and kale pasta recipeEasy weeknight meals are always a welcome discovery so I don’t make the same things over and over. I love that this chicken sausage and kale pasta dish doesn’t have a creamy, bad-for-you sauce dumped on top. Instead, it’s packed with veggies and a little chicken broth to give great flavor. We typically always use Banza pasta (made from chickpeas) and if you haven’t tried it yet, you’re missing out. It doesn’t have a noticeable taste difference and has two times the protein, fiber and half the carbs of traditional pasta noodles. I can’t rave about it enough!

The original recipe calls for turkey sausage, but I subbed spicy chicken sausage from Trader Joe’s and it was delicious! Terrafirma serving pieces are always such a pretty statement and this one is from Open Door Shop.

Chicken Sausage and Kale Pasta

Ingredients
  • 6 oz dry pasta (Banza or whole wheat)
  • 1 tsp olive oil
  • 1/2 medium yellow bell pepper chopped
  • 1/2 medium onion chopped
  • 8 oz chicken or turkey sausage
  • 1 clove garlic minced
  • 1/2 cup low-sodium, organic chicken broth
  • 1 bunch kale stems removed and chopped
  • 1 tbsp Parmesan cheese shredded

Instructions
  1. Fill a pot with boiling water and cook pasta according to package directions. Drain and set aside.
  2. In a large skillet heat the olive oil over med-high heat and sauce the bell pepper and onions until translucent
  3. Slowly add in the sausage and garlic and cook until browned and cooked through.
  4. Pour in the chicken broth and kale and cook for 5 minutes to let the kale soften and slightly wilt.
  5. Add in the prepared pasta to the sausage mixture and stir to combine.
  6. Top with fresh Parmesan and enjoy!

    I was literally just looking for a meal like this for dinner tonight. We don’t have kale but we do have broccoli so maybe I’ll switch that out and give this a try! Everything I was finding had such a thick creamy sauce and I was trying to avoid those calories!!
