Healthy Grilled Chicken DinnerI feel like I’m behind on trying grilled romaine, but now that I’ve tried it, I’m hooked. It’s so simple –  3 minutes — and gives such good flavor! Brian loved the romaine without any dressing, but I topped mine with one of my go-to’s, Trader Joe’s green goddess dressing. We paired it with a lemon herb marinated grilled chicken and it was a delicious, light summer dinner!

Grilled Chicken and Romaine Salad Dinner

Ingredients
Lemon Herb Chicken Marinade
  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp lemon zest
  • 1/3 cup fresh lemon juice
  • 2 cloves garlic minced
  • 1 tbsp fresh basil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt & pepper
  • 2 tbsp olive oil
Grilled Romaine Salad w. Corn & Avocado
  • 2 ears corn
  • 3 tbsp fresh basil sliced thin
  • 1 head romaine lettuce cut in half lengthwise
  • olive oil
  • salt & pepper

Lemon Herb Chicken Marinade
  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp lemon zest
  • 1/3 cup fresh lemon juice
  • 2 cloves garlic minced
  • 1 tbsp fresh basil

Grilled Romaine Salad w. Corn & Avocado
  • 2 ears corn
  • 3 tbsp fresh basil sliced thin
  • 1 head romaine lettuce cut in half lengthwise
  • olive oil
  • salt & pepper
Instructions
Grilled Chicken
  1. Pound the boneless, skinless chicken breasts between sheets of parchment paper to make sure they're even in thickness. Place chicken in a bowl or ziplock bag.
  2. Mix marinade ingredients together in a mason jar and shake to combine. Pour over chicken and stir, making sure all chicken pieces are coated. Place in the refrigerator for 30 minutes- overnight.
  3. Grill over medium-high heat for 8 minutes per side, or until cooked to 165 degrees.
Grilled Romaine
  1. Cut the romaine in half lengthwise, drizzle with olive oil and sprinkle with salt and pepper
  2. Grill the corn for 5 minutes, flip and cook for another 5 minutes. Cut the corn off the cob and place in a bowl.
  3. Cut the avocado into pieces and add to the bowl with corn. Season with salt and pepper, stir and set aside
  4. Place the romaine on the grill cut side down and grill 1-2 minutes. Turn the romaine over and cook another 1-2 minutes.
  5. Place the romaine on a plate, top with the corn avocado mix, thinly sliced basil, desired dressing and enjoy!

    This sounds so good! I think I had grilled romaine one time at a dinner and it was delicious! Such a great way to switch up a regular salad!
