Healthy Blueberry CrispI absolutely love the abundance of fresh fruit that every summer brings. This healthy baked blueberry crisp was the perfect recipe to use up a container of fresh blueberries and justΒ feels like a classic summer dessert. During the off season this could easily be made with frozen blueberries! We like to top our crisps off with vanilla ice-cream and highly recommend it!

Healthy Baked Blueberry Crisp

Ingredients
Fruit Mixture
  • 4 cups blueberries
  • 1 lemon juiced
  • 1/4 cup chia seeds
  • 3 tbsp coconut sugar
Crumb Topping
  • 1 cup old fashioned oats (not quick cooking)
  • 1/2 cup whole wheat flour
  • 1/4 cup coconut sugar
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • dash salt
  • 1/3 cup butter or coconut oil room temperature

  • 4 cups blueberries

  • 1 cup old fashioned oats (not quick cooking)
  • 1/2 cup whole wheat flour
  • 1/4 cup coconut sugar
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • dash salt
  • 1/3 cup butter or coconut oil room temperature
Instructions
  1. Heat oven to 350 degrees and spray a 8x8 or 9x9 baking dish with non-stick spray
  2. Combine all the 'fruit mixture' ingredients together and stir to evenly coat
  3. Add the blueberry mixture to the baking dish and spread to evenly distribute
  4. For the crumb topping, in another bowl combine the oats, flour, coconut sugar, cinnamon, nutmeg and salt.
  5. Cut the butter or coconut oil into the oat mixture with either knives or with your hands. You want the mixture to have small clumps pieces
  6. Spread the crumb topping on top of the berry mixture in the pan
  7. Bake 40-45 minutes
  8. Top with vanilla ice cream and enjoy!
