Healthy Baked Blueberry Crisp

Ingredients
Fruit Mixture
  • 4cups blueberries
  • 1 lemonjuiced
  • 1/4cup chia seeds
  • 3tbsp coconut sugar
Crumb Topping
  • 1cup old fashioned oats(not quick cooking)
  • 1/2 cup whole wheat flour
  • 1/4cup coconut sugar
  • 1 1/2tsp cinnamon
  • 1/2tsp nutmeg
  • dash salt
  • 1/3 cup butter or coconut oilroom temperature
Instructions
  1. Heat oven to 350 degrees and spray a 8×8 or 9×9 baking dish with non-stick spray
  2. Combine all the ‘fruit mixture’ ingredients together and stir to evenly coat
  3. Add the blueberry mixture to the baking dish and spread to evenly distribute
  4. For the crumb topping, in another bowl combine the oats, flour, coconut sugar, cinnamon, nutmeg and salt.
  5. Cut the butter or coconut oil into the oat mixture with either knives or with your hands. You want the mixture to have small clumps pieces
  6. Spread the crumb topping on top of the berry mixture in the pan
  7. Bake 40-45 minutes
  8. Top with vanilla ice cream and enjoy!
