Chicken Zoodle Soup RecipeIs it just me or are there multiple bugs/the flu going around and everyone seems to be getting sick or just recovering? Our house can’t seem to catch a break from colds to stomach bugs and lately we’ve been gravitating towards all the comfort foods. This chicken zoodle soup recipe is easy, healthy and such a delicious twist on an old favorite.

Chicken Zoodle Soup

Ingredients
  • 1 tbsp coconut oil
  • 1/2 sweet onion diced
  • 3 garlic cloves minced
  • 1 red bell pepper thinly sliced
  • 1/2 cup baby carrots sliced into rounds
  • 1/2 tsp fresh ginger grated
  • 2 tbsp red curry paste
  • 1/3 cup sugar snap peas
  • 1 1/2 cups chicken broth
  • 1 14 oz can coconut milk full-fat or light, your preference
  • 1 cup chicken cooked and shredded
  • 1-2 zucchini spiralized
  • 3 tbsp fresh cilantro chopped
  • 2 green onions sliced
  • lime wedges optional, for serving

  • 1/2 cup baby carrots sliced into rounds
  • 1/2 tsp fresh ginger grated
  • 2 tbsp red curry paste
  • 1/3 cup sugar snap peas
  • 1 1/2 cups chicken broth
  • 1 14 oz can coconut milk full-fat or light, your preference
  • 1 cup chicken cooked and shredded
  • 1-2 zucchini spiralized
  • 3 tbsp fresh cilantro chopped
  • 2 green onions sliced
  • lime wedges optional, for serving
Instructions
  1. Heat coconut oil in a large dutch oven over medium heat. Add in the onions, garlic, pepper, carrots, ginger and sprinkle of salt and pepper
  2. Cook, stirring occasionally for 5 minutes and vegetables has softened. Mix in the red curry paste
  3. Pour in the chicken stock, coconut milk, snap peas and cooked chicken. Raise the temperature and bring mixture to a boil. Once boiling, reduce to low, top with lid and cook for 5 minutes.
  4. Add in the zoodles and stir for 1 minute.
  5. Serve and enjoy! Top with green onions and cilantro.

    Sounds delicious! I would have to omit the coconut milk though. For some reason every time I have tried it I don’t feel well the next day. :-/ Speaking of, I am sorry that you guys have been battling illness!! 🙁 My husband had the flu last week and I have been on Tamiflu as a preventative measure. Anyways… Stay healthy and have a great day! 🙂
