Shrimp "Fried" Cauliflower RiceCauliflower is one of those vegetables that I just couldn’t get on board with…. until last night’s dinner. I was hesitant to pick up a bag of the cauliflower “rice” that everyone else raved about because I honestly didn’t think I’d be a fan. This healthy shrimp fried cauliflower rice recipe is not only easy to throw together, but it’s so good! In college we would always head to a local chinese spot for their fried rice with yellow sauce and who knows why we kept going back, because we always felt miserable after eating it. I loved that this dish tasted so much like the real deal, but was packed with healthy ingredients and left me feelingĀ good, not stuffed and uncomfortable. This recipe will definitely be one that’s worked into our monthly rotation!

Shrimp Fried Cauliflower Rice

Ingredients
  • 8 ounces shrimp raw, peeled and deveined
  • 1/2 tsp salt and pepper
  • 2 tbsp olive oil divided, I used coconut oil
  • 3 eggs beaten
  • 2 garlic cloves minced
  • 3/4 cup carrots shredded or diced
  • 3/4 cup broccoli (or peas) frozen or fresh
  • 1 bag cauliflower rice Trader Joe's sells one
  • 2 tbsp soy sauce
  • 1/4 tsp sesame oil
  • 2 green onions white and green parts, chopped

  • 2 garlic cloves minced
  • 3/4 cup carrots shredded or diced
  • 3/4 cup broccoli (or peas) frozen or fresh
  • 1 bag cauliflower rice Trader Joe's sells one
  • 2 tbsp soy sauce
  • 1/4 tsp sesame oil
  • 2 green onions white and green parts, chopped
Instructions
  1. Season the shrimp with salt and pepper and set aside.
  2. Heat a large skillet over medium-high heat and heat 1 tbsp of oil until shimmering.
  3. Dump the shrimp into the skillet and cook 30 second- 1 minute on one side, flip and cook 30 seconds-1 minute on the other side. Make sure to cook the shrimp through-- it should be pink when finished. Once cooked, set shrimp aside on a small bowl/plate.
  4. Reduce heat to medium and add the eggs to the pan. Continuously stir the eggs to scramble them into small pieces. Remove the eggs from the heat when they're almost completely cooked and put in the bowl/plate with the cooked shrimp
  5. Add remaining 1 tbsp of oil to the skillet and heat the minced garlic for 30 seconds. Stir in the carrots and cook for 2 minutes. Then mix in the broccoli and cook for 1-2 minutes. Add in the cauliflower rice and stir to evenly mix. Let the cauliflower sit, cooking for 2 minutes to let it "fry".
  6. Stir the rice mixture, cover and let cook for 5-7 minutes. Add in the soy sauce and sesame oil and stir to evenly combine.
  7. Mix in the shrimp and eggs and warm for a few additional minutes. Top with green onions and enjoy!

    I lovoe cauliflower rice and this is definitely a recipe I need to try. Lately I’ve been making it with turkey meetballs or sausage and marinara, so good. Have a good weekend love!
