With all the warm weather we’ve been having comes an endless supply of fruits and veggies. Tuesday has become a family dinner night when my girlfriends come over, cook dinner and we get the chance to catch up. 
This week we decided to go with a light, middle eastern vegetable salad and some grilled bread on the side.  All the ingredients came from local farmers, with only one or two exceptions. The basil and mint came straight from my little garden and we piled on the feta cheese for extra flavor.  Barefoot Contessa never fails to disappoint and we’ll definitely be making this again. Enjoy!
