I’ve officially found my new favorite spring/summer dish- roasted shrimp and orzo pasta. The combination of the fresh dill and lemon juice magically blend together for a light and zesty flavor that pops against the orzo. I love that the shrimp is just slightly roasted and sprinkled with olive oil and salt and pepper. No long marinating to worry about with these little sea creatures! 
I cut the recipe in half and still had plenty of leftovers- so if you plan on following the recipe exactly, I suggest calling some friends up and have your own little dinner party.
Trust me, they’ll thank you.

    yum yum! do you cook at home often? My idea of grocery shopping these days happens to look like stocking up on organic and healthy varieties of microwaveable food. ha ha. Goodness. 🙂
