One of my favorite summer dishes is a easy salad.
Toss a few ingredients together and you’ve got a light and refreshing meal.

Shrimp Salad:
already cooked shrimp (deveined and tails removed)
handful of asparagus, cut into pieces
cannellini beans, washed and drained
fresh basil, washed and torn into pieces
tomatoes, cut into quarters
I drizzled mine with Trader Joe’s Fat Free Balsamic Vinaigrette
and a dash of freshly ground pepper
