Let’s get down to business. Making homemade salsa is much more simpler than I originally imagined. The way it was pictured in my head was a kitchen covered with chopped veggies, tomato juice dropping from the cabinets and at least four  mixing bowls/appliances being used at once. Not the case with this simple recipe!
At the end of the work week my favorite way to unwind is with a glass of wine and an easy appetizer before dinner. Chips and salsa are without a doubt one of my constant cravings (and the reason I’m never able to finish dinner when we’re out at a mexican restaurant.)
After stumbling across this super easy salsa recipe I couldn’t help but make it that evening. All you need is a food processor (or high powered blender) and the hard work is taken care of. It makes a lot of salsa, so the recipe is great for entertaining or for saving some in the fridge for another day. It’s also totally customizable for your spicy preference.
Quick and Easy Salsa
recipe from mtn. momma cooks
ingredients:
1 14 oz. can diced tomatoes
1 10 oz. can original rotel
1/2 small onion, roughly chopped
1 clove garlic, peeled and smashed
1/2-1 jalapeno, seeded or not (depending on preference)
1 tsp. honey
1/2 tsp. salt
1/4 tsp. ground cumin
medium sized handfull of fresh cilantro
juice of 1 lime
directions:
Place all ingredients together in a food processor/blender and pulse for 30 seconds, or until all ingredients are combined and salsa is desired consistency. Taste for seasoning and adjust to taste. Serve with tortilla chips and enjoy!

After following these directions I went back and kept adding a dash more of this, a few more pieces of onion, a bit more jalapeno, etc. The salsa starts out pretty mild and you can add on from there. I served ours with tortilla chips and pretzel crisps. Carrot slices/chips also make a great veggie friendly way to enjoy salsa.

    Agreed love muffin! I load mine up with jalapenos and add a little sugs minus the honey to mine. The taste of homemade cannot be beat!

    This sounds almost exactly like my homemade salsa- you’re right, homemade is ridiculously easy (and so much better!!)
