Up there with red velvet and chocolate , my other favorite cake flavor is carrot cake. It reminds me of spring, Easter and warm weather. It also helps that there are shreds of actual carrots in the cake. That completely makes it a healthier option compared to other cakes since it includes a vegetable, right?

When Christina posted the recipe she uses for carrot cake energy bites I knew I’d be making them as soon as possible. Anything that comes close to tasting like actual carrot cake, or even just the batter, and  doesn’t include all the unhealthy ingredients is one I’m on board with.
Healthy Carrot Cake Energy Bites

ingredients:
1 c. rolled oats
1/4 c. shredded carrots
1/4 c. raw almonds, chopped
1/4 c. raisins
1/4 c. milled flaxseed
1/2 tsp. cinnamon
1/2 c. almond butter
1/3 c. honey (or maple syrup)
directions:
In a mixing bowl combine oats, shredded carrots, almonds, flaxseed, raisins and cinnamon.
Add almond butter and honey and mix to combine.
Place mixture in refrigerator for a minimum of 1 hr.
Shape mixture into 1 in. balls
(I recommend storing these in the fridge)
