The other night my younger cousin came over for a girls dinner before heading off to college. The Georgia heat was bearing down and we were looking for something light and healthy to serve as a side dish to our quinoa. This chickpea recipe was one of those simple times when you have everything you need and it takes less than ten minutes to assemble. It definitely needs time to let the flavors marinate, so give it at least 30 minutes before serving.
Chickpea and Tomato Salad with Fresh Basil
via green lite bites
ingredients:
1 can of chickpeas, drained and rinsed
1 pint of tomatoes, halved
25 large basil leaves, chopped
3 cloves of garlic, minced
1 tbsp red wine vinegar
1 tbsp apple cider vinegar
ย 2 tsp olive oil
1/2 tsp honey
pinch of salt
directions:
Toss all of the ingredients together and refrigerate for at least 30 minutes.
