As much as I would love to lounge in bed each morning with breakfast and a cup of coffee, it’s just not a reality. Quick, healthy foods are my go-to during the week and I save the pancakes and leisurely brunch menu for Saturday and Sunday. Most of the time I like to crumble half of the muffin over some greek yogurt and fruit for an extra flavor burst. This recipe is low fat, includes raw oats and even better warmed up if eaten alone.
Oatmeal Blueberry Applesauce Muffins

ingredients:
1 1/4 c. whole wheat flour
1 1/4 c. oats (old fashioned or steel cut)
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 tsp. cinnamon
1 c. unsweetened applesauce
1/2 c. lowfat buttermilk
1/2 c. brown sugar
2 tbsp. canola oil
1 large egg, lightly beaten
3/4 c. blueberries (fresh or frozen)
directions:
Preheat the oven to 375 degrees. Line a muffin pan with paper liners or spray lightly with cooking spray. In a large bowl combine the flour, oats, baking powder, baking soda, salt and cinnamon. In a medium bowl combine the applesauce , buttermilk, sugar, oil and egg. Make a well in the dry ingredients and add the applesauce mixture. Stir until just moistened and fold in the blueberries.
Fill muffin cups 2/3 full and bake 16-18 minutes.

    YUM! Oh my goodness these look perfect. I love the idea of crumbling them over yogurt too! I never thought to do that.
