1lbfresh green beanstrimmed and cut into 2-3″ pieces
1/4cupwater
1/2tsphimalaya sea salt
2tbspextra virgin olive oil
1tbspfresh lemon juice
2tspdijon mustard
1 smallgarlic clove
black pepper
pinchred pepper flakes
1/4cupcrumbled feta cheese
3-4 largebasil leavestorn or chopped, for garnish
lemon zestfor garnish
Instructions
Spray a large skillet with non-stick spray and add the sliced almonds to the pan over medium heat
Cooking, stirring frequently for 3 minutes. Be careful to not burn them! After 3 minutes, turn the heat down to medium-low and stir continuously for another 1-3 minutes. Place the almonds on a plate and set aside
With the heat still on med-low, place the green beans in the pan and add water and 1/4 tsp salt
Place a lid on the green beans and cover, stirring every now and then for 7-10 minutes and the green beans soften.
Take off the lid, increase the heat to high and cook until the remaining liquid is gone, around 2-4 additional minutes.
In a small jar or container, mix the olive oil, lemon juice, mustard, garlic, black pepper, red pepper flakes and 1/4 tsp salt. Stir to combine and set aside
Pour the olive oil mixture into the pan with the green beans, add the toasted almonds and half of the crumbled feta. Stir to evenly coat everything, adding more lemon juice or pepper if desired.
Top dish with the remaining crumbled feta, lemon zest and fresh basil. Enjoy!
