Ingredients
Cilantro Gremolata
1/4
cup
cilantro
finely chopped (can also use mint, parsley, basil or combination)

tsp
shallot
finely diced

tsp
lemon zest
sale and pepper
to taste
Grilled Lemons
2
lemons
halved

tbsp
oil
I typically use olive oil
Grilled Mahi Mahi

mahi mahi fillets
can also use red halibut, snapper or cod

I use olive oil
salt & pepper
Instructions
Cilantro Gremolata
Combine all ingredients for the gremolata in a small bowl. Cover and set aside in the refrigerator.
Grilled Lemons
Cut lemons in half and brush with oil. Grill cut side down for 1 minute and set aside.
Grilled Mahi Mahi
Heat grill to high
Brush the fish fillets with the oil on both sides and season with salt and pepper
Place the fillets on the grill, close the cover and let cook for 4-5 minutes per side.
Plate the fish and squeeze grilled lemon slices on top. Drizzle with olive oil and spoon gremolata over the fish.Enjoy!
