Grilled Mahi Mahi with Cilantro Gremolata

Ingredients
Cilantro Gremolata
  • 1/4cup cilantrofinely chopped (can also use mint, parsley, basil or combination)
  • 1tsp shallotfinely diced
  • 1tsp lemon zest
  • sale and pepperto taste
Grilled Lemons
  • 2 lemonshalved
  • 1tbsp oilI typically use olive oil
Grilled Mahi Mahi
  • 4 mahi mahi filletscan also use red halibut, snapper or cod
  • 3tbsp oilI use olive oil
  • salt & pepper
Instructions
Cilantro Gremolata
  1. Combine all ingredients for the gremolata in a small bowl. Cover and set aside in the refrigerator.
Grilled Lemons
  1. Cut lemons in half and brush with oil. Grill cut side down for 1 minute and set aside.
Grilled Mahi Mahi
  1. Heat grill to high
  2. Brush the fish fillets with the oil on both sides and season with salt and pepper
  3. Place the fillets on the grill, close the cover and let cook for 4-5 minutes per side.
  4. Plate the fish and squeeze grilled lemon slices on top. Drizzle with olive oil and spoon gremolata over the fish.Enjoy!
