Easy Weeknight Pelmeni Recipe
Ingredients
  • 116 oz pelmeni packagecan also sub tortellini
  • 1large handful fresh greenspower greens, arugula, kale
  • 18 oz cherry tomatoeshalved
  • 1 jalapenoseeded and diced
  • 4 green onionssliced
  • 3cloves garlicminced
  • 1/2cup chopped fresh parsley
  • 2tbsp extra virgin olive oil
  • fresh Parmesan cheesegrated
Instructions
  1. Cook Pelmeni according to package directions. Drain and set aside
  2. In a large skillet or wok, heat 2 tbsp of olive oil and add the garlic and diced jalapeƱo. Saute on low-medium for 2 minutes.
  3. Add the green onions and tomatoes to the pan and stir to combine. Season with salt and pepper (to taste). Cook for 4 minutes.
  4. Add the Pelmeni and fresh greens to the pan. Gently stir to evenly mix. You want the greens to start wilting and shrink. Sprinkle with fresh Parmesan and mix again.
  5. Serve in bowls and top with fresh parsley and parmesan cheese.
