1large handfulfresh greenspower greens, arugula, kale
18 ozcherry tomatoeshalved
1jalapenoseeded and diced
4green onionssliced
3clovesgarlicminced
1/2cupchopped fresh parsley
2tbspextra virgin olive oil
fresh Parmesan cheesegrated
Instructions
Cook Pelmeni according to package directions. Drain and set aside
In a large skillet or wok, heat 2 tbsp of olive oil and add the garlic and diced jalapeƱo. Saute on low-medium for 2 minutes.
Add the green onions and tomatoes to the pan and stir to combine. Season with salt and pepper (to taste). Cook for 4 minutes.
Add the Pelmeni and fresh greens to the pan. Gently stir to evenly mix. You want the greens to start wilting and shrink. Sprinkle with fresh Parmesan and mix again.
Serve in bowls and top with fresh parsley and parmesan cheese.
