Healthy Baked Oven Fajita Recipe
Ingredients
Chicken Seasoning
  • 1tbsp chili powder
  • 1/2tbsp paprika
  • 1/2tsp onion powder
  • 1/4tsp garlic powder
  • 1/4tsp cumin
  • 1/8tsp cayenne pepper
  • 1tsp sugar
  • 1/2tsp salt
Fajitas
  • 1medium yellow onion
  • 3 bell peppersany colors
  • 1lb boneless, skinless chicken breasts
  • 2tbsp oil (of your choice)I use refined coconut oil (has no coconut oil flavor)
  • 1medium lime
  • tortillas
  • sour cream/greek yogurt
  • fresh cilantro
  • avocado or guacamole
Instructions
  1. Heat oven to 400F. Combine all chicken seasoning together in a small bowl and set aside.
  2. Slice the onion, bell peppers and chicken breasts into thin strips. Add everything to a 9×13 baking pan.
  3. Lightly drizzle the oil over the chicken and vegetable mixture and stir to evenly coat. Next, sprinkle the seasoning mixture over the pan and stir again to make sure all pieces are evenly coated.
  4. Cook 35-38 minutes, stirring once halfway through
  5. Squeeze 1/2 a lime over entire pan once finished cooking.
  6. Place chicken and vegetable mixture into tortillas, top with greek yogurt/sour cream, fresh cilantro and avocado. Enjoy!
