Healthy(er) Oatmeal Raisin Cookie
Ingredients
  • 1cup instant oats
  • 3/4cup almond flourwhole wheat or all-purpose will work as well
  • 1 1/2tsp baking powder
  • 1 1/2tsp ground cinnamon
  • 1/8tsp salt
  • 2tbsp coconut oilcooled
  • 1 large eggroom temperature
  • 1tsp vanilla extract
  • 1/2cup maple syrupagave or honey can also be subbed
  • 1/4cup raisins
Instructions
  1. In a medium size bowl stir together the instant oats, flour, baking powder, cinnamon and salt. Set aside
  2. In another bowl whisk together the egg, coconut oil and vanilla. Add in the maple syrup and stir to evenly combine.
  3. Add the wet ingredients to the dry bowl and stir to combine. Add in the raisins
  4. Cover and chill the dough in the fridge for 30 minutes
  5. Heat oven to 325 F. Scoop cookie dough into balls and flatten a little with your hand or a glass cup. Bake 11-14 minutes
