Healthy(er) Oatmeal Raisin Cookie
Ingredients

instant oats
3/4
cup
almond flour
whole wheat or all-purpose will work as well
1 1/2
tsp
baking powder
1 1/2
tsp
ground cinnamon
1/8
tsp
salt
2
tbsp
coconut oil
cooled
1
large
egg
room temperature
1
tsp
vanilla extract
1/2
cup
maple syrup
agave or honey can also be subbed
1/4
cup
raisins
Instructions
In a medium size bowl stir together the instant oats, flour, baking powder, cinnamon and salt. Set aside
In another bowl whisk together the egg, coconut oil and vanilla. Add in the maple syrup and stir to evenly combine.
Add the wet ingredients to the dry bowl and stir to combine. Add in the raisins
Cover and chill the dough in the fridge for 30 minutes
Heat oven to 325 F. Scoop cookie dough into balls and flatten a little with your hand or a glass cup. Bake 11-14 minutes
