Ingredients
Salad Ingredients
  • 2 avocadosthinly sliced
  • 2 carrotsspiraled or thinly sliced
  • 2 green onionsthinly sliced
  • 1 mangocut into matchsticks
  • 1 red bell pepperdiced
  • 1 jalapeno pepperthinly sliced
  • 3tbsp chopped fresh cilantro
  • 3tbsp chopped peanuts
  • 1tbsp sesame seeds
Peanut Butter Vinaigrette
  • 1/4cup rice wine vinegar
  • 3tbsp creamy peanut butter
  • 3tbsp freshly squeezed lime juice
  • 2tbsp honey
  • 1 garlic cloveminced
  • 1/2tsp toasted sesame oil
  • 1/4cup grapeseed oil
  • salt & pepperto taste
Instructions
Vinaigrette
  1. In a mason jar or glass container, combine all vinaigrette ingredients together and shake to combine. Set aside
Salad
  1. On two separate dinner plates layer all ingredients from avocados through jalapeños.
  2. Drizzle with the peanut butter vinaigrette and top with cilantro, chopped peanuts and lightly sprinkle the sesame seeds.
  3. Add any protein of choice — shrimp, grilled chicken, etc
