vegetable quinoa

Like I mentioned in last week’s post sharing some favorite healthy recipes, quinoa is one of my favorites. It’s great to toss together at the beginning of the week and then use as various meals throughout the week. Try it over spinach for lunch, or paired as a side to chicken or fish for dinner. Again, the key is cooking it in vegetable or chicken broth instead of water. This recipe is more of a guideline that I alter weekly with whatever vegetables I have. Feel free to substitute anything listed.

Simple Vegetable Quinoa

ingredients:
1 c. quinoa
2 c. chicken or vegetable broth
1 cucumber, diced
1 c. cherry tomatoes, cut in halves
2 green onions, chopped
1/2 c. feta cheese
olive oil
red wine vinegar
dash of sea salt

directions:
Cook quinoa according to package directions but replace the water with broth. Toss in cucumbers, tomatoes, green onions, feta cheese and any other vegetables that you like! Chickpeas are also great in this. For a dressing I pour 1 tbsp each of olive oil and red wine vinegar. Add salt to taste and mix to combine.

    I think cooking quinoa in chicken broth over water makes SUCH a difference in the flavor!
