stuffed eggplant

So this dish reminds me of most soups- it tastes amazing, but doesn’t photograph too well.
Just take my word, it’s delicious. Stuffed eggplant is one of my favorite ways to eat the vegetable. This one could easily be man friendly since it has meat in it (isn’t that almost always their main concern?). For an all veggie version, this recipe is a tried and true staple.

Baked Eggplant Parmesan Boats w. Sausage

ingredients:
(serves 4)
2 medium eggplants, stems trimmed and cut in half lengthwise
3 links sweet Italian chicken sausage, casings removed
1/2 small onion, finely diced
2 cloves of garlic, crushed
1 1/3 c. crushed tomatoes
5 basil leaves, more for garnishing
salt & pepper, to taste
1/2 c. shredded part-skim mozzarella cheese
4 tsp. grated Pecorino Romano

directions:
Preheat oven to 400 degrees F. Bring a large pot of water to boil. Hollow out the flesh of the eggplant to create a boat.  Leave 1/2 inch of skin around the outside. Chop the eggplant flesh. Put the eggplant into the boiling water and keep submerged for 3 minutes (I held mine down with a spoon). Remove from the water and set aside.
Next, brown the sausage in a large skillet over medium-high heat, breaking the meat up while it cooks into smaller pieces. Add the onions and garlic and cook on medium-low heat for three minutes. Add 1 cup of chopped eggplant and cook for two minutes. Add 1 cup of crushed tomatoes, season with salt & pepper and cook for two minutes. Remove from heat and stir in fresh basil.
Pour remaining 1/3 cup of crushed tomatoes on the bottom of a 9×12 baking dish and put the eggplants on top. Divide the sausage mixture up between the boats. Sprinkle with cheese on top. Cover with aluminum foil and bake for 30 minutes.

    This looks so delicious. I’ve never cooked with eggplant but I always order it when I’m out. Thank goodness this has meat in it or it would never go over with my husband.

    I’m always a little hesitant with eggplant since I have never cooked it – but this recipe looks easy enough that even I couldn’t mess it up!!
