Combine fresh blueberries, orange zest and oatmeal in a muffin and I’m sold. I love the unexpected orange zest that the recipe called for and would actually think about adding the zest from two oranges in the next batch that I make. These are great to start the morning off, or for a late afternoon snack.

Blueberry Orange Oatmeal Muffins

ingredients:
1 c. all-purpose flour
(I subbed 1/2 c. whole wheat , 1/2 c. all-purpose)
1 c. rolled oats, plus more for sprinkling on top
1/2 c. brown sugar, packed
1/2 tsp. cinnamon
1 tsp baking powder
1/2 tsp. salt
1/2 c. unsalted butter, melted and cooled
1 c. plain yogurt (I used 0% Chobani)
1 large egg, beaten
1/2 tsp. vanilla extract
1 c. blueberries
zest of 1 orange

directions:
Heat oven to 400 degrees F.
In a large bowl combine flour, oats, brown sugar, cinnamon, baking soda, baking powder and salt. In another bowl whisk together butter, yogurt, egg and vanilla. Pour mixture over dry ingredients until just combined. Fold in blueberries and orange zest.
Spray muffin tin with non-stick spray or line with paper liners. Scoop the batter evenly into the tray and top with a sprinkle of oats. Bake for 15- 18 minutes.
