This vegetable salad recipe is easily one of my favorites. It’s packed full of flavor and so refreshing. I think it makes a great, light lunch served with toasted pita. You can also pair it with shrimp or chicken for added protein. Since it’s already toasty weather in the southeast I’ll be making this non-stop.
Middle Eastern Vegetable Salad

ingredients:
10 scallions, white & green parts, sliced
1 lb. tomatoes, diced, seeded & cored
1 hothouse cucumber, halved lengthwise seeded & diced
1 can of chickpeas, drained & rinsed
1/3 c. chopped fresh parsley
1/3 c. chopped fresh mint
1/3 c. julienned fresh basil
1/2 c. freshly squeezed lemon juice
1 tbsp minced garlic
kosher salt & black pepper
1/2 c. good olive oil
8 ounces crumbled feta cheese
directions:
Place the scallions, tomatoes, cucumber, chickpeas, parsley, mint and basil in a large salad bowl and toss to combine.
In a small bowl or measuring cup, whisk together the lemon juice, garlic, 2 teaspoons salt, and 1 teaspoon pepper. Slowly whisk in the olive oil to make an emulsion. Pour the dressing over the salad, tossing gently to coat all the vegetables. Add the feta, sprinkle with salt and pepper, and toss gently. Serve the salad with the toasted pita bread.

MMm, if I take out the feta cheese, I can eat this and still be vegan! I loove chick peas, olive oil, and tomatoes. Sounds delicious.
