Today I’m sharing another great, easy recipe that works for everything from a picnic lunch to a tailgating side. Who doesn’t love a good pasta salad that involves fresh mozzarella? The picture above was before I drizzled the dressing on, but it looks so fresh! If you can boil water, you can make this dish. I promise.
Caprese Pasta Salad
via simply scratch
ingredients:
2 c. dried pasta, cooked according to package directions
1 pint grape tomatoes, quartered
1 container fresh mozzarella pearls (or small balls cut in half)
1 c. fresh basil, sliced thin
kosher salt & pepper
for the dressing:
2 cloves fresh garlic, minced
1/3 c. balsamic vinegar
3 tbsp olive oil
directions:
In a small bowl whisk together the garlic and balsamic vinegar. Slowly add in the olive oil and set aside.
Cook pasta according to package directions, rinse with cold water and add in the tomatoes, mozzarella and basil. Next, season with salt and pepper to taste. Drizzle the dressing over the pasta and stir to mix.
Enjoy!
I don’t know why I never think to add pasta in with the caprese but this easily takes this dish into Fall for me!!
