Quinoa Veggie Fried Rice

When I get back in town after a few days of traveling I always crave something that’s filling, but healthy for dinner. Since typical fried rice isn’t the healthiest option, I tested out a new quinoa version. What’s that? Y’all didn’t know I was a fan of quinoa? 😉 This recipe was so.freaking.good . It’s packed with veggies and a drizzle of sriracha on top adds some welcomed heat. I made this for dinner Sunday night, had it for lunch yesterday and ended up freezing some in individual portions for workdays when the last thing I feel like doing is preparing a complicated dish. I think even the guys would be a fan of this one (I know B will be!), especially with a chicken addition if necessary.

Quinoa Chicken “Fried Rice”

ingredients:
2 tbsp olive oil, divided
2 large eggs, beaten
2 cloves of garlic, minced
1 small onion, diced
8 ounces mushrooms, sliced
1 head broccoli, cut into florets
1 zucchini, chopped
1/2 cup corn
1/2 cup peas
2 carrots, peeled & grated
3 cups cooked quinoa
1 tbsp fresh grated ginger
3 tbsp soy sauce
2-3 green onions, sliced
Sriracha (optional)

directions:

Cook quinoa according to package directions and set aside. I cooked mine in vegetable broth for extra flavor.

Heat 1 tbsp of olive oil in a skillet over low heat. Add eggs and fry until cooked through (2-3 mins per side), flipping only once. Set aside to cool before dicing.

Heat remaining 1 tbsp olive oil in a large wok over medium-high heat. Add garlic and onion, cooking for 4-5 minutes or until the onions are translucent. Add mushrooms, broccoli and zucchini.  Cook, stirring constantly for 3-4 minutes. Add corn, carrots, peas and quinoa. Stir and cook for another 1-2 minutes.

Add ginger and soy sauce and gently toss to combine. Stir and cook for another 2 minutes. Lastly, stir in green onions and diced eggs. Drizzle with sriracha and enjoy!

note: I’m not a fan of broccoli or peas and omitted those. Customize the vegetables to your liking!

    I totally agree- you’re recipes are always delish!!! I have a hard time with quinoa on its own- tastes a bit bland but this way sounds delicious!!

    Yummm! I love fried rice, quinoa is a great way to make it healthier. I actually just made a fried rice with cauliflower “rice” last week and it was pretty good. I feel like quinoa might be even more satisfying though1

    I’ve made this one before (minus the ginger ’cause ew!) and it is SUCH a great replacement for when you’re wanting fatty Chinese food! I like the addition of Siracha.

    I’m really trying to revamp my eating habits during the week, sticking to healthy options (so on the weekends I can splurge a little bit more), so I’m going to have to bookmark this! I haven’t tried quinoa yet as a meal yet (just tried a bite from someone else), so this looks like a good place to start! xo!
