Buffalo Chicken Stuffed Peppers

You know what’s good? Chicken seasoned with a homemade ranch dressing mix, tossed in buffalo sauce and then baked in bell peppers. I’ve used ranch dressing packets in tones of previous recipes, but never knew how easy it was to make your own, MSG-free version, until now. I loved the flavor that was packed in these peppers and the idea of serving it with guacamole was a perfect addition.

Buffalo Ranch Stuffed Peppers

ingredients:
4 boneless, skinless chicken breasts
1 medium onion, sliced
1/2 tsp each: dried parsley, dried dill, dried chives, garlic powder, onion powder
sea salt and pepper, to taste
4 peppers, any colors
1/2 c. hot sauce
1/4 c butter

*adjust the butter to hot sauce ratio depending on how spicy you like it. I scaled back on the butter and added more hot sauce for extra heat.

directions:
Preheat oven to 350 degrees. Mix dried spices together. Place your chicken breast and sliced onions in a single layer on a greased or parchment paper lined baking pan. Sprinkle the entire pan with dried spices. Salt and pepper, to taste. Place a small slice  of butter or other fat of choice over each chicken breast. Bake for 25-30 minutes or until chicken is cooked through. While chicken is cooking, melt ¼ cup butter in a pot over medium low heat. Once melted add in hot sauce and stir. Set aside.
Once chicken is cooked, run a knife through the chicken and onions until chicken is in small bite size pieces (I shredded using my kitchen aid mixer). Combine chicken with the hot sauce mixture. Spoon chicken mixture evenly in all 4 peppers. Place stuffed peppers in a baking pan. Bake for 35-40 minutes or until peppers are softened to your liking. Serve with Guacamole.

    This is totally going on next weeks grocery list. I tried stuffed peppers once before. They weren’t awful, just lacked bold flavor we are so used to. I’ll have to try this. I love buffalo chicken!
