Skinny Taco Stuffed Bell Pepper

If you were to ask Brian what I suggest for dinner majority of the time it would be pizza or Mexican food. Those two food genres would more than do it for me if I had to narrow down my options. Making both of those into healthy options is what’s key. While we make my favorite crockpot chicken tacos regularly (also great for salads, homemade nachos, wraps, etc), I wanted to test out a new recipe using bell peppers as the ‘base’. This version is such a great way to cut down on carbs if you’re watching them or if you’re just looking for a healthy alternate that gets in an extra vegetable serving. Top with a large scoop of fresh guacamole, avocado slices or more salsa and enjoy!

Mexican Stuffed Peppers

ingredients:
1 lb ground turkey
1 small yellow onion, diced
1 clove garlic, minced
2/3 c water
1 packet taco seasoning (I make my own)
1 15 oz. can black beans
3/4 c salsa
3/4 c sour cream (I sub 0% plain greek yogurt)
2 cups shredded cheese (used cheddar)
3 medium bell peppers, cut in half

directions:

Heat oven to 350 degrees. Add ground turkey, garlic, and onions and cook on medium heat for about 20 minutes, stirring occasionally. Add ⅔ cup water and 1 packet taco seasoning and continue to cook for additional 10 minutes. Add ½ black beans and salsa, combining into mixture. Top with ½ cup shredded cheese and let it melt. Reduce heat to low.
Place bell peppers (hollow side- up) on a greased baking pan, and bake in the oven for about 7 minutes.Remove the peppers from the oven and scoop the taco filling inside each one. Top each with remaining cheese.Place back in the oven until the cheese is melted. Serve with remaining black beans and salsa, along with sour cream.

We also served ours with guacamole!

    This looks delicious! I made stuff peppers once and they didn’t have much flavor. These sound much better, especially topped with some avocado!
