Healthy Sweet Potato Nachos

I’m all about not depriving yourself of a craving and instead trying to find a healthy, spin on the dish, like these healthy sweet potato nachos. For the Super Bowl I knew Brian (like most guys) would want wings, nachos, chips and tons of non-healthy dishes. Who am I kidding, I want those things too! Sweet potato nachos are such a delicious way to combine the best of both worlds.

Toppings can easily be adjusted to your personal preference and based on what you have on hand in the kitchen. Load them up with tons of fresh veggies and beans if you’re vegetarian, or with this insanely good shredded chicken or barbecue pork if you need some meat in the dish. The appetizer world is your oyster ladies and gentlemen.


Healthy Sweet Potato Nachos

ingredients:
2 large sweet potatoes, peeled and sliced in 1/4” circles
1 tbsp olive oil
1 cup black beans, rinsed
1 cup shredded cheese
1 green pepper, diced
1 jalapeño, diced
1 tomato, diced
Himalayan sea salt, to taste
4-5 green onions, chopped
avocado (optional)
greek yogurt (optional)

directions:
Heat oven to 425 degrees F. Line a baking sheet with non-stick spray or parchment paper. Place the sweet potato rounds on the baking sheet in one layer. Drizzle with olive oil and sea salt. Roast in the oven for 10 minutes, turn the potato slices over and continue cooking for another 10 minutes. Turn the oven to broil and cook for another 5-8 minutes, or until crispy.
Top the sweet potato slices with black beans, cheddar cheese, pepper, tomato and any veggies/toppings you want! Bake at 350 degrees for 5-7 minutes, until cheese is melted. Serve with fresh avocado, greek yogurt (sub for sour cream), green or red onions and fresh jalapeños. Enjoy your sweet potato nachos without the guilt!

    i love nachos and sweet potatoes so this is a natural win! i’ve been thinking about new ways to make it a bit healthier and this is def being added to my list to make 🙂
