Veggies lovers step right up, this is a dish you’re going to love! For everyone else, it’s a perfect side dish to grilled chicken or shrimp. The flavors mesh together so well and it’s even better the next day. Love those recipes that only get better with time. The recipe makes a large serving and would be perfect for a bbq or easy summer dinner. I followed Val’s lead and paired it with pita on the side- so good!
side note- I accidentally picked up a green bell pepper instead of the red and it was still amazing!
Healthy Chickpea Salad

ingredients:
2 cans of chickpeas, rinsed and drained
1 red bell pepper, diced
1 yellow pepper, diced
1 english cucumber, peeled and diced
1 small red onion, diced
3 garlic cloves, minced
1/3 c. feta cheese
3 tbsp fresh parsley
1 lemon, juiced
1 lime, juiced
1/4 c. olive oil
4 tbsp. red wine viegar
1/4 tsp. each salt, pepper and oregano
directions:
Place rinsed beans in a large bowl. Add the next 7 ingredients and stir. In a separate bowl, mix the olive oil, lemon, lime, vinegar and spices. Pour over bean salad and serve with pita bread.

    YUM! Chickpeas are so good. I find myself eating them so often in the summer!
