While out on the west coast and dining at Simzy’s , in Manhattan Beach, I saw California Grilled Artichoke listed on the menu. I’m obviously late on the artichoke bandwagon and I’m not sure if it’s because they’ve always look slightly intimidating sitting at the market, but I’ve have never cooked with them before.
From that moment on I knew I’d be experimenting with recipes including artichokes once I returned home. If our burgers (and a few glasses of their world famous sangria) weren’t so fabulous and amazingly filling I would’ve ordered the restaurant’s version and somehow made room inside my stomach.
I came across this recipe yesterday and knew I had to try it immediately. Making the marinade ahead of time and letting the artichoke absorb the flavors for a good 5-6 hours was key. The combination of the balsamic vinegar, ginger and garlic (I added this little ingredient) gave the vegetable a nice bold flavor without needing any dipping sauce.
To go with this side dish I also marinated and grilled some local shrimp by following this recipe. Instead of making the shrimp into skewers I tossed them into a grill basket and squeezed fresh lemon juice while they were still cooking.
Absolute perfection.
Are any of y’all scared of artichokes like I was or do you have a favorite recipe using the little veggie?

I never cooked with artichokes either, but now I have a reason to try it. My bbq is highly used during summer, and grilled veggies are my favorite 🙂 I`ll let you know once I try it!
Can you believe I’ve never had an artichoke in my life? This actually looks amazing so it may be time to branch out!
