During the summer months I love simple dishes that can be thrown together after a long day but still taste like I put effort into it. Quinoa (also seen here) has quickly become one of my favorite ingredients to cook with. Its versatility lets me be creative with recipes and the health benefits are endless (think high levels of protein, iron and calcium).
Tonight I followed a loose version of a recipe found here. My version left out the red pepper (because I didn’t have one), added 1 cup of black beans (drained & rinsed) and topped it with avocado slices and some plain greek yogurt.
If I’d had a tomato and a zucchini at my house those two would’ve joined the meal as well.
The best part?
It always makes plenty and leaves me with leftovers to freeze or eat later on in the week.

Love this! I used to be vegan and discovered Quinoa then and even though I’m now longer veggie I still eat it like no other haha.
My favorite is stir frys but this looks so yummt too- yay for delicious health food!

I have yet to take the quinoa plunge. I know I should, everyone loves it and it seems so simple. I need to add it to my grocery list.
