It’s safe to safe I’m crazy for all things pumpkin. Tis the season though, right? Add oatmeal into the mix and I’m pretty much a goner. I followed a recipe for pumpkin spiced oatmeal pecan cookies, but made a few changes and they turned out phenomenal.
adjustments made:
whole wheat flour instead of white
ground flaxseed for the egg
and added raisins instead of pecans.
Whip up a batch of these and you’re sure to instantly be in the autumn spirit
(even if it is still warm where you are!)
You can’t go wrong with a pumpkin spice cookie this time of year! Love the addition of raisons instead of pecans!
