You know those days when you’re longing for warm, comfort food? This tortellini soup is the one to bookmark and whip out during those times. I was searching for something easy to pull together that wouldn’t take hours simmering on the stove and found this recipe from my mom. The soup doesn’t require many ingredients and is ready to eat before you know it. Served with some warm, crusty bread and topped with fresh parmesan and you’ve got a simple yet delicious fall soup.
