Today we’re mixing things up from the weekly sweet treat and I’m sharing one of my favorite new very healthy meals. A few months ago a friend introduced me to tofu shirataki noodles. I was slightly apprehensive (I had never had tofu before…) at first, but now they’ve become a weeknight staple. If you’re a fan of the Hungry Girl recipes and books then you’ve probably seen her variations involving the noodles.
The noodles are an excellent substitute for real pasta noodles and as an added bonus, the entire bag is a mere 40 calories {dream come true!}. Need more benefits? They’re gluten-free, no cholesterol or sugar, vegan and low carb to name a few.
There are numerous recipes on ways to flavor the noodles, but on nights when I’m running short on time or looking for a quick fix here’s what I do:
Drain and rinse the package of noodles.
Using a knife or kitchen shears cut the noodles in half (there are some really long one!)
Use paper towels to soak up the excess moisture (this will take a few towels)
Heat in the microwave for 1 min.
Take one wedge of Laughing Cow cheese and place on noodles- heat for additional 1 min.
Stir to mix in the cheese.
Add a sprinkle of parmesan cheese and any fresh herbs (parsley, cilantro)
Don’t be scared to try them! The texture isn’t exactly that of normal pasta, it’s a bit more chewy, but you quickly get used to it. Have any of you tried these or have a favorite way to make them?

Your recipe sounds delicious! I have tried them before and thought they were a great alternative to normal pasta! I mixed the tofu noodles in with spaghetti squash!

I just don’t know if I can do it. I have a pretty serious aversion to tofu. But my serious addiction to pasta is rapidly becoming an issue…

You seriously read my mind with this post!! I am vegetarian so I am not a stranger to tofu, and I have been thinking for the past few days I need to start eating better (less carbs) and need some more meal options and these little babies are going to be added into my diet!! Where is somewhere else to find recipes for them?

Finally tried these tonight and actually didn’t mind them! You are right, they were a little chewy, but not bad! Cameron, however, was not a fan.
