Earlier this week when preparing to celebrate Brian’s birthday his only request was a chocolate cake. I searched the internet and my cookbooks for a simple, yet satisfying one and came across this recipe. Easy, doesn’t require high-end cocoa from somewhere around the globe and can be made in one bowl. Less clean up? Sign me up.
While it’s not the absolute healthiest, it’s so moist and delicious that it’s worth making for those special occasions….. or anytime you’re needing to satisfy a serious sweet tooth. The fabulous aroma that fills the house sure doesn’t hurt either.
ingredients:
2 c. sugar
1 3/4 c. all-purpose flour
3/4 c. unsweetened cocoa powder ( I used Hershey’s)
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
2 eggs
1 c. milk
1/2 c. vegetable oil
2 tsp. vanilla extract
1 c. boiling water
directions:
Heat oven to 350 degrees. Grease 2 9 in. round pans. Combine the sugar, flour, cocoa powder, baking power, baking soda and salt. Add the eggs, milk, oil and vanilla extract until combined. Stir in the boiling water. (note: the batter looks very runny and thin here- that’s normal!) Pour evenly into the two pans and bake for 30 mins. After cooled, frost the first the icing and then stack the second piece on top. Top with icing and enjoy!
