One of my favorite parts about fall is having the aroma of spices and baked goods wafting through the house. Most of the best holiday recipes are packed with not-so-healthy ingredients, but I found a recipe for pumpkin banana bread last year and I’ve easily made it fifteen times since then. It’s the perfect recipe to work some whole wheat flour into the mix without altering the flavor and it’s a lighter version of a favorite breakfast treat of mine.
Whip up a batch of this delicious bread for family, friends and for around the house.
(I also top mine with a thin spread of almond butter)
Pumpkin Banana Bread

ingredients:
3/4 c. all-purpose flour
1/2 c. whole wheat flour
3/4 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. pumpkin pie spice
3 ripe bananas, mashed
1/2 c. pureed pumpkin
2 tbsp. butter, softened
1/2 c. light brown sugar
1 egg white
1 egg
1 tsp. vanilla extract
1/4 c. chopped pecans (optional)
directions:
Heat oven to 325 degrees. Grease a 9×5 loaf pan with baking spray.
In a medium bowl combine flour, baking soda, salt, cinnamon and pumpkin pie spice. Set aside.
In a large bowl cream butter and sugar with an electric mixer (can also do by hand). Add egg white, egg, bananas, pumpkin and vanilla. Beat at medium speed until thick.
Add flour mixture (and nuts if you’re using them) at low speed.
Pour into loaf pan and bake for 60 minutes.

This definitely looks like a healthier version! I saw one recipe last night that called for 3 cups of sugar! Yikes.

So here’s the deal. I don’t like pumpkin. I KNOW. It’s making my life really difficult, actually, because all the recipes floating around right now have it… But I think I need to give it another shot, because this sounds like it would make my apartment smell PHENOM.
