Minus the olives I love greek salads. Add some cheese tortellini to the recipe and you’ve got a new spin on an old favorite. Like you’d expect this recipe tastes better the second and third day (if it isn’t eaten before then!). It’d be the perfect thing to pack for a picnic in the park or dinner with friends. I like it best served chilled, but you can always serve this as soon as you’re finished tossing it all together.
Greek Tortellini Salad
via two peas & their pod
ingredients:
1 20 oz. package refrigerated cheese tortellini
1 1/2 c. grape tomatoes, cut in half
1 large cucumber, chopped
1 c. kalamata olives, pit removed & chopped
1/2 red onion, chopped
3/4 c. crumbled feta cheese
for the dressing:
1/4 c. extra virgin olive oil
3 tbsp. red wine vinegar
1 clove garlic, minced
1/2 tsp. dried oregano
salt & pepper, to taste
directions:
 
Bring a large pot of salted water to a boil. Cook tortellini according to the package directions. Drain and rinse with cold water.
Place the tortellini in a large bowl. Add the tomatoes, cucumber, olives, red onion and feta cheese.
In a small bowl, whisk together the olive oil, vinegar, garlic, oregano, salt and pepper. Pour the dressing over the salad and stir until salad is well coated. Serve immediately or keep in refrigerator.

    Tortellini salad is my FAVORITE! I have a recipe I usually make for my roommates and now it’s become a go-to for every party we have (you know, there’s nothing better to eat when you come back from the bar than tortellini salad). Your Greek version sounds so yummy!
