Last night’s Meatless Monday menu left us with a light summer dish that was also filling. We served this spicy black bean guacamole salad without any protein, but next time it would be great topped with grilled shrimp or chicken. It reminds me of a Chipotle meal, but for a fraction of the cost and easily made at home.
Spicy Black Bean Guacamole Salad
via oatmeal with a fork
ingredients:
1 avocado, mashed to puree
1 lime (or about 2 tbsp. lemon juice)
1 garlic clove, grated
1/4 – 1/2 tsp. salt
1/4 – 1/2 t. red pepper flakes
1 15 oz. can black beans, rinsed & drained
1/4 c. cilantro (or parsley)
1/3 c. corn
1 small tomato
2 c. romaine lettuce
extra virgin olive oil, to drizzle with
directions:
Mix the mashed avocado with the lime or lemon juice, garlic, salt and red pepper flakes to create the dressing. Toss the dressing with the beans, corn, tomato and cilantro/parsley. There are two options on how to serve it: toss with the lettuce or, we served ours on top of a bed of lettuce. Drizzle with olive oil and serve!

You’re speaking my language. Mmmmm….Mexican food is my all-time favorite. We make varrying versions of taco salads quite often, especially this time of the year. We’ll have to throw this one into the mix!
