I’ll preface this by saying I used to hate cauliflower. Growing up you couldn’t pay me to eat the vegetable. I’d seen a lot of recipes for cauliflower pizza crust floating around Pinterest and finally decided to take the risk, with no back up plan if it turned out awful. Luckily, it turned out so much better than I imagined. If you decide to make this healthy twist on a pizza remember these two tips:

1. Don’t expect it to taste like normal pizza dough. It’s cauliflower, not bread
2. Make sure you have a good blender (I used my Ninja) or food processor.

I would definitely make this again and plan to add it into the mix when a pizza craving hits and I have some time on my hands. The crust takes about 30 minutes and then the pizza itself cooks another 5-10 minutes.

Cauliflower Pizza

ingredients:
2 C. grated cauliflower (about 1/2 a head)
1/4 c. plain, 0% greek yogurt
1 egg, beaten
2 tbsp Italian seasoning
dash of sea salt

directions:
Preheat oven to 400 degrees F. In a food processor or blender pulse the cauliflower florets until grainy. Place 2 cups of grated cauliflower into a clean dish towel. Wrap it up in the middle and twist closed, wringing out as much moisture as you can. Repeat until the cauliflower is relatively dry and place in a bowl. Next, add the beaten egg, greek yogurt, seasoning and salt. Fold the mixture until everything is combined. Line a baking sheet with parchment paper and spread the “dough” with your hands until 1/2 in. thick to form your crust. Bake for 30 minutes or until lightly browned and able to hold its shape.

Remove crust from the oven and top with your favorite sauce, cheese and toppings. Put back in the oven and cook 5-10 minutes or until the cheese is melted.

Enjoy an essentially guilt free pizza!

    I’ve never heard of cauliflower pizza before but I’d be willing to try it. It will have to be a night I’m husbandless because I don’t see this going over well with him!
