Back with another eggplant recipe for you! This one is ridiculously easy to make, tastes delicious and the entire 8×8 dish is only 340 calories. This would be a great dish to make whenever you have a pizza craving and you could always omit the cheese, but isn’t everything better with cheese? Eggplant parmesan is delicious, but can quickly become unhealthy in restaurant recipes. This one is simple and healthy!

Healthy Eggplant Parmesan

ingredients:
1 large eggplant, sliced in 1/4” thick slices
1 1/2 c. canned tomato sauce
1 tsp. oregano
1 tsp. basil
1/2 c. shredded cheese
salt & pepper, to taste

directions:
Preheat boiler. Line an 8×8 baking dish with aluminum foil and set aside. Place the eggplant slices in an even layer on a baking sheet. Drizzle with olive oil and sprinkle with sea salt. Broil eggplant slices for about 7 minutes on one side, flip and broil for another 5 minutes on the other side. Preheat oven to 425 degrees F.
Next, combine the tomato sauce and stir in spices (I used Italian seasoning). In the prepared 8×8 baking dish layer a 1/2 c. of sauce, 1/2 the eggplant slices, 1/2 c. sauce, 1/4 c. of cheese, 1/2 eggplant, 1/2 c. sauce and 1/4 c. cheese on top. Bake in the oven for 25 minutes.

    I love eggplant this way! Sometimes I’ll add a sprinkle of panko for that crispy taste!

    Do you have to prep the eggplant like blot with paper towels or anything or does the broiling take care of that? It looks so good and easy!

    I’ve wanting to make this forever but my husband doesn’t like eggplant! May have to make it and surprise him!
