If you’re looking for a new muffin recipe to try, make this one asap. These are so delicious and anything with lemon zest in it is sure to be a winner. Add an unexpected bite of cream cheese in the center and the whole recipe gets better. Note: if you’re feeding a crowd I’d recommend doubling the recipe. This only made about 9 for me. I’m sure this would taste equally amazing with raspberries!
Blueberry Lemon Cream Cheese Muffins
via two peas &their pod
ingredients:
1 1/2 c. all-purpose flour
1/2 tsp. salt
2 tsp. baking powder
1/4 tsp. cinnamon
1/2 c. sugar
zest of 1 large lemon
1/4 c. canola oil ( I used coconut oil)
1 large egg
1/3 c. skim milk ( I used almond milk)
1 tsp vanilla extract
1 c. blueberries (fresh or frozen)
filling:
3 tbsp. cream cheese
1 tsp. lemon zest
1 tbsp sugar
directions:
Preheat oven to 400 degrees. Grease a muffin pan with cooking spray and set aside. In a medium bowl whisk together the flour, baking powder, salt and cinnamon. In a small bowl combine the sugar and lemon zest. Rub sugar and zest together until fragrant. Add to the flour mixture and whisk again. In a separate bowl mix together oil, egg, milk and vanilla.
Incorporate the wet ingredients into the flour mixture. Add slowly and be sure to not over mix. The batter will be lumpy and thick. Gently fold in the blueberries.
In another small bowl, mix together the cream cheese, lemon zest and sugar until smooth. Fill each muffin cup halfway with batter. Next, add about 1 tsp of cream cheese filling to each muffin cup. Cover each cup with remaining batter so you can’t see the cream cheese filling. Sprinkle each muffin with a little sugar. Bake muffins for 17-20 minutes.

Oh my gosh these looks soo good! I have a really good buttermilk blueberry breakfast cake recipe(with lemon). Everytime I make it though I eat about half the cake lol.
